ie. one landing page for iPhone users, one landing page for BlackBerry users, one page for Android users, etc.

FYI, found an awkward solution, but it works.
We have all mobile devices redirect to a page that does has no content eg. http://www.mysite/nocontent . We use plugin redirection to redirect page /nocontent to a page /redirection_script that uses a php script that allows redirection to different pages for different mobile devices - script is excellent and by donation only at http://detectmobilebrowsers.mobi/
Seems to work well - try visiting http://www.QxMD.com on your mobile device - each mobile device will be redirected to a specific page, but formatted with WPTouch
NB, to have non-touch screen BlackBerry devices get recognized, we had to manually add their user agent string to the WPTouch Plugin
